We live and work in the community where these rare, DNA tested, Pure Nacional beans are grown. We pay the farmers premium prices and provide them with cloned Pure Nacional trees from our nursery at our cost.

“The fermentation and drying processes are the most important criteria that allow a cacao bean to develop its full characteristics”, said a renowned Swiss chocolate maker. No one has ever had to develop the “full characteristics” of 40% white Pure Nacional beans before.  

“White beans must be fermented and dried differently than purple beans. It is unknowable in advance which is which. After two years and 81 trial batches, now we know”, said Horsley.
