“OK! OK! I’ll do it”, said Steve DeVries, who lived with the cacao beans in Costa Rica. He went to Peru, collaborated with Horsley, and they unraveled another mystery of processing the 40% white and 60% purple Pure Nacional beans.

Six months and 37 trials later, Horsley sent 100 pounds of beans to DeVries, who roasted and ground them into chocolate liquor. “My equipment is not working, however, Harry Way has a small chocolate making machine in Las Vegas at a place called Chef Rubber”, said DeVries.

Pearson, and the Pure Nacional chocolate liquor went to Las Vegas to visit Paul Edward of Chef Rubber.
