In the Marañón Canyon, cacao harvesting is a family event. To guarantee traceability the harvested pods are stacked and left unopened until we arrive. Harvesting the pods from the trees is a precise skill, if done incorrect, it will risk damaging some beans. Then the cacao beans have the first pre-selection. Only the best beans are chosen. We weigh the beans in the presence of the farmers and pay premium prices. This price is paid 100% cash, immediately. We then transport the Pure Nacional beans to our processing facility in the Marañón Canyon to begin the process of fermenting and drying.
