Harvest on the Farm

In the Marañón Canyon, cacao harvesting is a family event. To guarantee traceability, the harvested pods are stacked and left unopened until we arrive. Harvesting cacao pods from trees is a precise skill. If done incorrectly some of the cacao beans can be damaged. Then, the cacao beans go through the first pre-selection. Only the best beans are chosen. We weigh the beans in the presence of the farmers and pay premium prices. This price is paid 100% cash, immediately. We then transport the Pure Nacional beans to our processing facility in the Marañón Canyon to begin the process of fermenting and drying.
